
I was just wondering the other day..."Why havent I posted a single Recipe made of Egg?".....Instead of searching for an answer I wanted to post one of the egg dishes that i relisha lot...thats my favourite Egg Biryani recipe to start with ! Iam an Eggeterian and I honestly enjoy eating Eggs:-)) During my childhood days I have only had eggs twice or thrice..that too only boiled eggs. The best part during my hostel life in Bangalore,India use to be the 'Egg biryani' and couple of other Egg recipes that my roommate use to make.I even remember buying some eggs and requesting my roommate to make Egg Biryani for me and use to eat it like i have been starving.Iam really not sure how the authentic egg biryani would taste like...coz' the egg biryani i make doesnt require any grinding of masala etc.Its a rather simple recipe that can be made in 30 mins.So, for all the Egg lovers.....here is one such recipe that will make you to ask for more!
Ingredients :
2 cups of Basmati Rice
2 Large eggs
2 Boiled eggs ( cut them into pieces-length wise )
1/2 cup of chopped onions
1 cup of chopped tomatoes
2 Green Chillies
1/2 teaspoon of ginger garlic paste
3-4 tablespoon of Oil/ghee
1 teaspoon of turmeric powder
1 tablespoon of Red Chilli Powder
1/2 teaspoon of garam masala powder
4-5 Cloves
2-3 Bay leaves
A pinch of Cardamon Powder
Salt
Wash the Basmati Rice , drain the water and cook the rice after sometime.
Heat some oil/ghee in a pan.
Fry the Cloves,Bay leaves.
Add the onions,green chillies,ginger garlic paste and fry them till the onions turn transparent.
Now add the chopped tomatoes,turmeric powder,red chilli powder and the garam Masala Powder.Mix well and cook for 10 mins.
Add Salt,Cardamon Powder and Mix well.
Now Break the eggs and add the contents.This process needs lots of stirring.Its almost like making Egg Bhurji..actually it is :-).
After 10-12 mins once the mix is dry enough to be mixed with therice remove the pan from heat.
Now add the cooked basmati rice to the curry.Mix well.Then add the boiled egg pieces and mix well without breaking them.Serve hot with chips/papad or a hot curry of your choice !

Carrot Rice
Hi! Am back with a simple rice recipe. Carrot rice....its yummy and easy to make ! You can make the ground powder(that we use in this rice) in advance,store it in the fridge and use it within 3 weeks from the date of preparation.
Ingredients :
1 cup of cooked rice
A little more than 1/2 cup of chopped carrots(Boil them for sometime)
1/2 cup of chopped onions
3-4 tablespoon of Oil
2-3 tablespoon of Roasted Peanuts(Powder them)
3-4 cloves
Salt
Fry the following ingredients in 1 teaspoon of oil and then powder them.
1-2 tablespoon of grated dry coconut
3 Red Chillis
1 tablespoon of cumin seeds
1-2 tablespoon of coriander powder
Heat some oil/ghee in a deep saute pan.
Fry cloves.Add onions and fry them till they turn transparent.Now add the grated carrots,fry for 2-3 mins in medium flame.Sprinkle water.
Now add salt,rice,ground powder and mix well.Fry for 2-3 mins.Add the powdered peanuts,mix well and serve hot.

Potato Rice
Potato Rice....Sometime back, I had a party at home and i remember how muzzy i was on the previous day thinking what rice dish to make for the party. ( Surprisingly it took me little time to settle conclusively on the other dishes :-) ) I was looking for a simple and a yummy rice dish since i did not want to spend a long time in the kitchen.
I ended up calling my mom who is my wise and trusted guide and advisor.She gave me this wonderful recipe of Potato rice.I made it exactly the way she told me to do it except that i forgot to add cloves and bay leaves:-) .The party was a conspicuous success and everybody loved my Potato Rice.Kids loved it too!:-)
Ingredients :
2 cups of Basmati Rice (Wash,clean and soak in water for 30 mins)
1 big potato (Peel the skin and chop them into small pieces)
5-6 tablespoon of green peas(optional)
1/2 cup of chopped onions
4-5 tablespoon of chopped tomatoes
1-2 green chillies
7-8 cashewnuts (broken into halves)
2-3 tablespoon of Oil/ghee
1 tablespoon of Ghee
1/2 tablespoon of turmeric powder
1/2 tablepsoon of coriander powder
1/2 tablespoon of cumin powder
1 teaspoon of garam masala powder
5-6 tablespoon of Mint Leaves
Salt
Heat some oil/ghee in a deep saute pan.Fry the cashewnuts and once they start changing color, add the chopped onions and green chillies.Fry onions till they start changing color.Do not over fry them.
Then add tomatoes,turmeric powder,coriander powder,cumin powder and garam masala powder.
Mix well and saute for 3-4 mins.Add the potatoes,green peas and mint leaves.Mix well and saute for 2 mins.Now add the basmati rice (after draining the water) and mix well.
Saute for 2 more mins.Cook the rice in a rice cooker or pressure cooker.Serve hot with raitha.

Tomato Rice
Tomato Rice...Am sure tomato rice can be made in several different ways.This is one such method which is very simple to make and very delicious!
Got this excellent recipe from my mom and thought of sharing it with my readers.
Ingredients :
2 cups of Basmati Rice (Wash,clean and soak in water for 30 mins)
1 medium size onion (chopped)
2 big Tomatoes (chopped into small pieces)
1 Garlic Pod (Optional)
1/2 tablespoon of chana dal (soak in water for 5-10 mins)
1 green chilli
7-8 cashewnuts (broken into halves)
1 tablespoon of grated ginger
2 tablespoon of Oil
1 tablespoon of Ghee
1/2 tablespoon of turmeric powder
1/2 - 1 tablepsoon of red chilli powder
Salt
Heat some oil in a deep saute pan.Fry chana dal,green chillies,grated ginger and the broken cashwenuts.Now add the chopped onions,mix well and fry till it turns golden.
Then add tomatoes,turmeric powder,red chilli powder and the required salt.Mix well and saute till the tomatoes become tender.(You can also make this tomato mix in advance,put it in an airtight container and store it in the fridge.It should be used within 4-5 days from the date of preparation).
Now drain the water completely from the soaked basmati rice and add it to the tomato mix.Add 1 tablespoon of ghee,mix well and saute for 2 mins.Cook the rice in a rice cooker or pressure cooker.Serve hot with raitha and papad/chips.

Vegetable Biryani

Vegetable Biryani ! I really love the word 'Biryani' for some unknown reason and Veg Biryani is one of my fav rice dishes.Who doesnt love it? :-)
normally do not use biryani masala powder to make this dish.Before learning how to make this dish I always thought that preparing this dish would be a big deal.But this recipe is really simple and doesnt even take 30 mins if you have all the vegetables cut and ready.Thanks to Frozen Mixed vegetables which redeems and buys back time :-))
Iam happy to present this version of Veg Biryani in my blog ! Try this and let me know! Its Biryani time:-)
Ingredients:
2 Cups of Basmati Rice/ordinary Rice (Clean and soak in water for 1/2 an hour)
1 1/2 cups of Mixed Vegetables (Potatoes,Beans,Green peas,Carrot,Cauliflower)
1/2 cup of choped onions
1/2 tomato(cut into small pieces)
1 bay leaf
4-5 cloves
Salt
2 tablespoon of Oil/ghee
Grind the following ingredients together with little water
3 tablespoon of grated coconut
1 cup of Cilantro
2 small pieces of Ginger
2-3 garlic pods
2-3 Green chillis
2 cardamoms
Heat some oil/ghee in a deep frying pan.Then fry the bay leaf,cloves.Add onions and fry till they turn soft.Add the vegetables and the tomatoes.Mix well.
Add the ground masala,salt and mix well.Now add the soaked rice and mix well.Shift the contents to a pressure cooker or a rice cooker and do not over cook. Serve hot with raitha !

Green Peas Pulav
For a simple lunch/dinner i would always vote for Green peas pulav...with lime/mango pickle and raitha.Frozen Green peas is something that is always available in my freezer and without any doubt it comes handy when my fridge is almost empty.
I usually think that grinding masala paste is so boring..but i end up doing it for a simple pulav or any side dish.Masala does add an alluring taste.Try this recipe and let me know !
Ingredients:
2 tablespoon Ghee/oil
1 1/2 cups of Basmati rice (clean and soak rice in water)
1 cup of green peas ( if not frozen cook the green peas till its tender )
Pinch of cardomom powder
1/2 cup of chopped onion
1 tablespoon of grated coconut
5-6 Cloves
1 Bay Leaf
For the Masala Paste : (Grind together with little water)
1/2 cup of chopped onions
2-3 Garlic pods
2 green chillies
A small piece of ginger
3 tablespoon of grated coconut
Heat oil in a skillet,fry the cloves,bay leaf and then the chopped onions.Fry for 2-3 minutes,add green peas and mix.Now add the masala paste and fry for 3-4 mins.
Add grated coconut,salt and mix.
Drain water and add the rice.Mix well and cook it in a pressure cooker/rice cooker.Serve hot with pickle/raitha.

Bell Pepper/Capsicum Pulav
Bell pepper! Who doesnt love this vegetable ?! They are high in vitamin C and also supply vitamin A, potassium and some B group vitamins.This rice dish is real yummy ! Try it and I bet you will love it !
Ingredients:
1 cup of Basmati rice , Clean it and soak it in water.
1/2 Bell Pepper(Capsicum) chopped length wise
1/2 tomato chooped length wise
1/2 cup of onion (cut it length wise)
2 pods of garlic
Small piece of Ginger
2 Green Chillies
1/2 tablespoon Turmeric Powder
3 tablespoon Oil/ghee
1 tablespoon Red Chilli Powder
1 pinch of Garam Masala Powder
5-6 Mint Leaves
1/2 tablespoon Cumin Seeds
4-5 Cashwenuts broken into small pieces
In a small skillet, heat some oil.Fry Cumin seeds.Add onions,ginger pieces,green chillies and garlic.Fry till the onions turn transparent.Then add tomatoes.Fry till it becomes tender.
Add Turmeric Powder,Red Chilli powder and mix everything.Add Capsicum now,mix again and saute for 4-5 mins.Then add a pinch of garam masala powder.Mix it.
Add cashewnuts,mint leaves and Saute.Now add the soaked rice (after draining the water).Mix everything together.Cook it in rice cooker with 1 1/2 cups of water.Serve this rice with plain yogurt/raitha/Chips.

Mixed Vegetables Sambhar Bhath
Hmmm.... Mixed Vegetables Sambhar Bhath ! Yes! Thats what i named this dish. It just took me 20 mins to make this rice dish .
Sometimes,it feels so good to spend less time in the kitchen !
Ingredients:
1 cup of Mixed Vegetables like ( Potatoes,Beans,Green peas,Carrots,Capsicum )
5-6 Small Onions chopped into pieces
1 1/2 cup of Rice
1/2 cup of Toor Dal
1 teaspoon mustard seeds
1 teaspoon cumin seeds
2-3 tablespoon Oil/ghee
1/2 tablespoon of Turmeric Powder
2 tablespoon of Sambhar Powder
Salt
Heat some oil in a pressure cooker.Add mustard seeds and then the cumin seeds.Add small onions.Fry till it turns transparent.
Now add the vegetables,fry it for a minute or two.Then add turmeric powder and sambhar powder.Mix everything together. Saute it for 2 mins.
Now add the rice and toor dal.Add Salt.Mix them.Add 4-5 cups of water.Cover the pressure cooker and remove it from the fire after 5-6 whistles.Serve hot with Papad/Chips !

Vangi Bhath
The first time i tasted Vangi Bhath in a fast food restaurant in
A friend of mine told me that its a very common Karnataka recipe made with Eggplant.With an urge to introduce this dish to my husband who loves Eggplant as much as i do , i bought the MTR Vangi Bhath Powder since i was not sure about the recipe of the Vangi Bhath powder.Though,this dish is made widely using Eggplant , one can always add vegetables like Capsicum,Carrot,Potato,Green Peas etc.
I have used Capsicum and Carrot other than Eggplant.This is my first posting and am happy to post a dish that i really like eating anytime-anyday !
Ingredients:
2 cups of cooked rice
3-4 Eggplant (small-medium size)
1 carrot
1 bell pepper
2 and half tablespoon of MTR Vangi Bhath Powder
1/2 tablespoon Turmeric Powder
4-5 tablespoon Oil
1 tablespoon of grated coconut
Tamarind - A little less than half the size of a small lemon ( Soak the Tamarind in warm water for sometime )
For the Seasoning:
1 teaspoon Mustard seeds
1 teaspoon Chana dal
2-3 Red Chillies
5-6 Cashwenuts broken into small pieces
In a small skillet, heat some oil and prepare the seasoning and keep it aside.Heat some oil in a vessel and add the chopped Eggplants,Carrot and the bell pepper.Saute it for a minute and cover the vessel.After 5 minutes remove the lid , add the turmeric powder and saute the vegetables and cover it.Once the Vegetables are cooked add the MTR Vangi Bath powder to the vegetables and mix it well.Then Add the Tamarind water and salt to the vegetables.Saute it and cover the vessel.
After a minute or so, add the seasoning to the vegetables and also add the grated coconut and mix it.Now,add the cooked rice to it and mix well.Serve the Vangi bhath with Potato Chips and Cucumber raita !
