Vangi Bhath


The first time i tasted Vangi Bhath in a fast food restaurant in Bangalore , i had instantly fallen in love with this dish.
A friend of mine told me that its a very common Karnataka recipe made with Eggplant.With an urge to introduce this dish to my husband who loves Eggplant as much as i do , i bought the MTR Vangi Bhath Powder since i was not sure about the recipe of the Vangi Bhath powder.Though,this dish is made widely using Eggplant , one can always add vegetables like Capsicum,Carrot,Potato,Green Peas etc.
I have used Capsicum and Carrot other than Eggplant.This is my first posting and am happy to post a dish that i really like eating anytime-anyday !

Ingredients:

2 cups of cooked rice
3-4 Eggplant (small-medium size)
1 carrot
1 bell pepper
2 and half tablespoon of MTR Vangi Bhath Powder
1/2 tablespoon Turmeric Powder
4-5 tablespoon Oil
1 tablespoon of grated coconut
Tamarind - A little less than half the size of a small lemon ( Soak the Tamarind in warm water for sometime )

For the Seasoning:

1 teaspoon Mustard seeds
1 teaspoon Chana dal
2-3 Red Chillies
5-6 Cashwenuts broken into small pieces

In a small skillet, heat some oil and prepare the seasoning and keep it aside.Heat some oil in a vessel and add the chopped Eggplants,Carrot and the bell pepper.Saute it for a minute and cover the vessel.After 5 minutes remove the lid , add the turmeric powder and saute the vegetables and cover it.Once the Vegetables are cooked add the MTR Vangi Bath powder to the vegetables and mix it well.Then Add the Tamarind water and salt to the vegetables.Saute it and cover the vessel.
After a minute or so, add the seasoning to the vegetables and also add the grated coconut and mix it.Now,add the cooked rice to it and mix well.Serve the Vangi bhath with Potato Chips and Cucumber raita !
